Watermelon, Mint and Coconut Salad April 21 2015

 Ingredients:

4 cups of diced watermelon
1 cup of red salad onion, chopped finely
2 cups of fresh mint leaves, chopped finely
1 cup of coconut (either desiccated or shredded)

Instructions:

Put all ingredients into a bowl and gently combine.  That’s it !   Couldn’t be easier and is SOOOO yummy!

You can get creative and add dressings, feta cheese, basil or heaps of other things.  I like to keep mine plain and simple.
